This dip has been quite a hit all year round. I’ve made it for game days, potlucks, and summer BBQs. Very easy and keeps in the fridge.
INGREDIENTS
2 cans of sweet corn
1 cup diced bell peppers. I like to use green and red.
1/2 cup diced onions
1 packet of Ranch dressing mix
1/2 to 1 cup of Duke’s mayonnaise. Depending on how much you like. I usually use 1/2 cup.
1/2 cup of sour cream
8 oz or 1 bag of shredded cheddar jack cheese
Salt and Pepper to taste
1 bag of Taco Doritos. If you can’t find Taco Doritos, then sub with Ranch Doritos.
INSTRUCTIONS
Drain 2 cans of sweet corn into a large mixing bowl.
Add onions and peppers
Stir in the mayonnaise and sour cream. A little at a time to your taste.
Stir in the packet of Ranch dressing
Mix well
Add the bag of shredded cheddar jack cheese and stir till well mixed.
SERVE IT UP
Transfer to a serving bowl and garnish with the Doritos. Place the remaining Doritos in a bowl for dipping.
Serve chilled
